Another Version of an Egg Sandwich

Poached eggs on toast is a breakfast that I never get sick of, especially when paired with sauteed garlic, tomatoes, and spinach and thinly sliced cheddar on sourdough bread that was perfectly toasted. Last step—drizzled mayo….why not? 



Mexican Corn

Most everyone goes nuts over this tasty side dish!  The lime, chili powder, and cumin combo is unbelievable. After making it a few times, you start to wing it on the ingredients-tasting it til you are happy with the combination of flavors.

Boil 4 ears of corn for 5 minutes (until you smell ‘corn’, my grams says).  After they are done boiling, place them in your broiler and broil for 10 minutes , then flipping them over and broiling them on the other side for about 10 minutes-this may take less time or more time, depending on your oven.  You want your corn nice and dark brown-not all over, but a good amount, then pull it out of the broiler and slather it with the sauce.

The Sauce/Mix together:

3/4 cup mayo

Juice from 2 limes

3/4 - 1 teaspoon chili powder

 1/2 cup crumbled cotija cheese

1/2-3/4 teaspoon cumin

salt to taste and fresh pepper
