
Most everyone goes nuts over this tasty side dish! The lime, chili powder, and cumin combo is unbelievable. After making it a few times, you start to wing it on the ingredients-tasting it til you are happy with the combination of flavors.
Boil 4 ears of corn for 5 minutes (until you smell ‘corn’, my grams says). After they are done boiling, place them in your broiler and broil for 10 minutes , then flipping them over and broiling them on the other side for about 10 minutes-this may take less time or more time, depending on your oven. You want your corn nice and dark brown-not all over, but a good amount, then pull it out of the broiler and slather it with the sauce.
The Sauce/Mix together:
3/4 cup mayo
Juice from 2 limes
3/4 - 1 teaspoon chili powder
1/2 cup crumbled cotija cheese
1/2-3/4 teaspoon cumin
salt to taste and fresh pepper
